Hi, my name is Jonathan Gillespie and I am 28 years old. I am a butcher to trade and a major food enthusiast. When I left school my first job was in the kitchen of one of Scotland's most prestigious restaurants, Champany Inn in Linlithgow, and that is where my passion and appreciation for the finest of food began. From there I decided to further my career and complete a traditional butchery apprenticeship. My enthusiasm for the trade quickly became evident and the desire to deliver good food was always at the forefront of my learning and heart. Early on I knew my dream was to one day run my own business therefore I worked very hard for six years in the butchery trade learning everything I could. When the opportunity arose earlier 2019 to start my own business I jumped at the chance and have spent many hours researching and sourcing from local farms to deliver the best of meat and poultry together with a range of "good food" products.
My ethos at Gillespie's Good Food is very important to me. I am super passionate about supporting our local traditional farmers and believe by supporting sustainable farming we are also helping our environment and ensuring the best welfare for animals. I would also prefer to be plastic free where possible and have sourced recyclable packaging therefore keeping single use plastic to the minimal. Our Beef, Lamb and Pork and Poultry are sourced directly from local trusted farms throughout the Scottish Lowlands and Borders. Working directly with farmers allows us to get our hands on some of the best native grass fed beef around.
